Cantucci


Foodblogger Io?! Mah, a periodi, diciamo che a volte brucio di passione mentre altre mi impegno decisamente poco. Brava ma non si applica un tempo  dicevano le mie pagelle, non sempre, ma capitava. 
Lo diceva esasperata anche mia mamma quando di fronte ai vari corsi di nuoto, di inglese o alle lezioni di piano vedeva il mio entusiasmo spumeggiante calmarsi pian piano e scemare fino a spegnersi.
Non che andassi male a scuola o nelle altre attivita', ma ho spesso dovuto fare i conti con un entusiasmo incostante il quale, dopo avermi fatta saltare pazza di gioia, spesso sparisce per lasciare posto ad un tiepido interesse. 
Parlando di hobby, anche riguardo alla cucina si altalenano talvolta momenti di iperattivita' a periodi di apatia totale con ricorso ad insalate pre-confezionate, scatolame e spesso sushi take-away.

Come mi sia venuto in mente di risvegliarmi da questo torpore con dei cantucci? Non lo so.
Forse mi ci voleva una ricetta semplice, dei biscotti senza fronzoli, croccanti e pieni zeppi di mandorle. 
E sapete cosa? Io i cantucci non li bagno nel vin santo ma da brava li inzuppo nel latte e caffe' a colazione.
Vi consiglio di fare altrettanto : )

Cantucci 
(circa 25-30 cantucci) 

250 gr farina 
150 gr zucchero 
150 gr mandorle (non spellate) 
2 uova medio-piccole
30 gr burro fuso (facoltativo)
1 cucchiaino di miele 
1 cucchiaino di semi di anice (facoltativo)
1 cucchiaino lievito vanigliato
1 pizzico sale


  • *Il burro non e' contemplato nella ricetta classica, tuttavia se non pensate di bagnarli in uno vino dolce e non amate biscotti troppo duri/croccanti meglio metterlo. A me piacciono molto anche senza burro. 
  • Tostare leggermente le mandorle e setacciare la farina con il lievito. 
  • In una planetaria, o con le fruste, montate bene le uova con lo zucchero ed il pizzico di sale. Va bene anche impastare tutto insieme se non avete la planetaria.
  • Dopo aver  montato le uova unite il burro, il miele e man mano la farina. Incorporata la farina unite le mandorle.
  • Se l'impasto risulta un po' appicoso bagnarsi appena le mani e fare due filoncini larghi circa 5 cm e spessi la meta', stenderli ben separati nella teglia ricoperta da carta da forno (si allargheranno in cottura).
  • Spennellare con latte o uovo sbattuto ed infornare in forno ventilato 175 C per 30-35 minuti. 
  • Sfornare e lasciare raffreddare per alcuni minuti altrimenti si rompono, dopo di che tagliarli leggermente in modo obliquo ad uno spessore di circa 1,5 cm. 
  • Rinfornare e ri-biscottare a 120 C per 8-10 minuti da ogni lato.

I cantucci li ho fatti una volta sola in vita mia ed erano del tipo morbido. Non ho ancora capito quali mi piacciono di più... quelli morbidi sono più golosi, quelli duri sono più stuzzicanti. E questi ultimi, come Federica, mi piace anche sgranocchiarli oltre che inzupparli nel caffelatte! Sono biscottini perfetti da inzuppare!

Non sai quanto sia contenta di rileggerti io che zitta zitta ripassavo (come del resto stasera,non ho il blogroll che mi aggiorna...) nella speranza di rivedere un post nuovo,i momenti in pò "così" li passiamo un pò tutti,a volte con dei motivi ben precisi,altre anche senza un motivo apparente... Io sono contenta che questi cantucci abbiano risvegliato in te la voglia di forno e fornelli e che poi si inzuppano nel latte e caffè che ben venga lo faccio anche io ;-)
